Recently I’ve been asked the same question in different ways:

What I hear in this question, regardless of the format, is unconscious limitation. And it’s unnecessary, once you know how easy it really is…

To put that another way, launching and running a business is a lot like driving a car.

If you’re sitting in a parked car, watching the cars whiz by on the freeway can be intimidating.

It seems like they’re going really fast and you’re not. But you also know what it feels like to be on the freeway – and it doesn’t seem that fast when you’re the one driving.

The key is (literally!) to turn on the ignition to start the car – that’s what gives you the opportunity to get into the flow of traffic.

Then your goal is to get out of the parking lot, onto the street, over to the entrance ramp and then accelerate onto the highway. It’s a natural progression, right?

Once you’re on the highway, you may need to pass other cars so you look for the passing lane ‘holes’ – if you miss one, another one will come.

Then the highway merges into a freeway or an interstate so you have more options for driving at your optimal pace and speed to wherever you choose as your destination.

It’s a big metaphor for business.

While you’re navigating your way to the freeway through these driving stages, you’re not likely to be hung up on what make, year and model of the other cars, or judging what clothes other drivers are wearing, or even how fast they’re going.

You’re not worrying about what you’ll encounter ten miles down the road because you can’t know in advance – you have to trust your resilience and skill to handle the detour, road construction or results of someone’s unfortunate accident.

Again, the same thing applies when it comes to your business.

The point is that you have to start your car and get rolling in order to get where you want to go. You’ll find the best way to get there as you drive. You’ll handle what comes up as you encounter it.

And, ironically, it doesn’t even matter what model of car you’re driving – if it has four wheels, an engine and some gas, it will move you.

In business, it’s the same thing… you don’t need to be in the top of the line sports car with the super-duper paint finish before you begin driving – just start somewhere and then build momentum. You’ll figure it out as you go. You’ll take advantage of the opportunities that are passing by in every moment – there’s no need for panic.

Don’t judge your success by someone else’s car. Remember that you get to choose how you want to create the results you want – the route others take or the model of car they drive may not work for you (and vice-versa).

The key is knowing that if you’re sitting in a parked car (aka, not doing something to actually start your business), you’re going nowhere fast.

If there are more experienced drivers on the road, is that enough to hold you back from driving where you want to go?

Of course not. You’d get in your car and go, right?

So, don’t let yourself be deterred from taking action just because you think you need more credentials or more accessories to make your car whiz-bang gorgeous or even a total map of the entire journey that the car will make over the course of its lifetime… (when said like that, it’s ludicrous to think that, right?)

Leaving a job, for what you hope are greener pastures, can be a tricky ordeal. Maybe you are planning to work at another job, for another employer, or perhaps you have decided to take the leap and become an entrepreneur, working for yourself.

Whatever you choose to do with the rest of your life, you should follow this guideline to make the transition smooth.

1. Write a resignation letter. Include the date of your departure, how much notice you are providing and a brief overview of your experience as an employee. Then know who needs to receive a copy and hand deliver the letter to the right people.

2. Schedule an exit interview. This is the most appropriate place to voice concerns that you have had. Some companies do not hold exit interviews, so if one is not possible, then tactfully insert suggested improvements or concerns in your letter of resignation. When one first goes on a raw food diet, they may find it quite easy to eat whole fruits, vegetables, salads and nuts for the first few weeks. Just the fact that preparation is much simpler than a cooked food diet, not to mention the way it will improve their health is a wonderful incentive to do well with it.

Within the first week of starting a raw food diet, most will begin to feel the positive effects to their health and wellbeing. That becomes incentive to stay on the diet knowing it is helping to somewhat detox your body and improving your health. After a while though you may feel that you are eating the same things repetitiously and may tire of it.

If you are planning on staying on a Raw Food diet for more than a few weeks, or even years, you will find it necessary to look for a variety of different recipes. You may be really gung ho at first about starting your raw food diet, but if you don’t vary your foods or eat the same things all the time you may get bored and give up. You will find if you research and learn what nutrients come from what, you will be able to put together a balanced raw food diet that you can be happy with. If you don’t, you may start craving unhealthy foods again, and you don’t want that.

If you do your homework, you will find there are raw food diet recipes that can be substituted for much of the different types of cooked dishes that you now enjoy. You don’t have to live on just salads! There are appetizers, main dishes, and a vast amount of desserts you can make. Smoothies made with whole fruits and green veggies are both delicious and packed with vitamins, minerals and nutrients essential to good health. You can make raw food diet bars that are pleasing and filling. You can even make vegan pizzas by using a nut base for the “dough”.

You should start out your raw food diet with a plan to cover all of your nutritional needs. There are websites for people who want to track their success in losing weight, or just those who want to keep track of what they eat. These sites often offer a printable spread sheet so you can keep track of and monitor what you are eating and what nutrients you may be lacking in your raw diet. You can make a food diary and follow it for a couple of weeks until you are certain you are eating healthy in your raw diet. One such website is fitday.com. Check it out; you may be glad you did.

In the case where you find you are lacking certain nutrients, you’ll have to do your homework and find a raw food source that contains what you lack. There will be some foods that contain a certain nutrient you lack that you don’t care for. This is where the raw food diet recipes will help you. There may be a certain combination of the food you don’t like, prepared with other foods you do like so you don’t really taste the one you don’t like. When there’s a will, there’s a way, so to speak.

Your nutritional needs may not be fully met on a raw food diet, so in that case, you may have to find another raw source. Raw food diets generally don’t have enough calcium for our body’s needs. What the Government recommends in the amount of calcium we require is not agreed by many. Some raw fooders believe that meat eaters lose absorption of calcium into their bodies due to a substance in animal products that blocks it. There is nothing however that confirms this claim.

You may find some die hard raw fooders who use raw dairy products to supplement the calcium they are lacking. This is very dangerous however, as salmonella, e-coli and other dangerous and often deadly bacteria’s may be present due to the lack of pasteurization. Some may go outside the box for this and use a calcium supplement although not raw, safer. There are certain fruits and vegetables very high in calcium that could simply be eaten more of such as broccoli, cabbage, oranges, raw almonds to name a few. By adding extra of these raw foods in the daily diet you should cover the deficit.

Just starting out with your own kitchen? Here are some lessons that could be of value to you . . .

When I moved out of my mother’s house twelve years ago I also moved out of her kitchen and into my own. And mine had absolutely nothing in it, no appliance, no utensils – nothing. At the time, I wasn’t thinking about all the great things I could cook for myself or the different innovations I could have from the latest equipment designs or new foods I always wanted to try out. No. my mind was on two things : First, I had very little money. And second, I’ve got to eat.

Most of my cash (and some of my credit) went to two key appliances. A refrigerator and a two  -burner stove. The refrigerator to store food and prevent spoiling and the stove for cooking. That’s two basic functions and two appliances to meet both. If there was one appliance that could store food and cook it too I would have bought it, but no such gadget exists – at least not yet.

In retrospect, the two-burner was a good call. I chose between that and a one-burner but decided to go with the two burner in case I wanted to cook two things at the same time. Guess what? This never happened. What I used the second burner for was to put very hot cooked dishes to cool off for a bit while I cooked another meal with the other burner. It saved me from having to put down very hot pots and pans in other surfaces which might get damaged by the heat. It seems trivial, I know, but you’ll appreciate this too if you get a two-burner.

With the refrigerator I have some regrets. I decided to go cheap and get a one door refrigerator where the freezer is on the inside with its own small plastic door. I also went for  a model where I had to defrost the freezer. The freezer door tended to ice up and not close properly necessitating the use of an ice pick to chip at the creeping ice so I could close the door. And yes, sometimes I would miss with the pick and hit the freezer lining damaging my  appliance. Because I had to defrost the freezer I would unplug it once a week, usually while I was out doing groceries. I could have spared myself all this with a no-defrost freezer or a two-door refrigerator. So that’s the right call : No defrost two-door fridge. If you are stuck with defrosting, don’t forget to empty the water tray behind the fridge from time to time. I forgot this initially, and water spilled on the floor.

Alright, now that we’ve got the core appliances out of the way, let’s talk about basic cooking utensils (I won’t go into eating utensils at all except to say to go for the microwaveable plateware and cups even if you don’t have a microwave because someday you will have a microwave).

For my first purchase I asked myself, ‘What is the easiest way to cook?’. Answer : Put some oil in a pan and fry stuff. So that’s the first thing – a frying pan. Once again I made a mistake and bought a regular pan instead of a non-stick pan. A non-stick pan is pricier but it will allow you to save a bit on groceries because you’ll be cooking with little or no oil and it will take a smaller amount of dishwashing agent to clean out; not to mention less effort during dishwashing. If I could do things over again I would buy just one high-quality pan and take care not to scrub off the Teflon when dishwashing instead of skimping on quality and having to buy multiple pans over the years.

Next, you need a covered pot. It has to be large enough to cook pasta in, that is, you have to be able to put a length of spaghetti without it falling out of the pot. You’ll also be boiling food in there like beef shank for stews or potatoes for mashing. Buy one with a thicker bottom for even heat distribution. Here’s a tip: Before buying one, go look at the pot covers they sell without the pot; be sure these covers fit the covered pot you are buying. Why? Because your pot cover will get damaged or lost at one point and you want the simple convenience of buying just the cover.

Next buy a knife. You’re going to use this knife for all your cutting – meat and vegetable. In the absence of a garlic crusher or mortar and pestle, you should be able to crush garlic using the side of the knife against a flat surface – so take that into account too. Highest quality affordable please. In my case I bought a knife set but just one really good knife will be fine.

Buy a good size cutting board.

Buy a spatula. Remember that a metal spatula will damage the non-stick pan, so if you have a Teflon pan go with a rubber or soft spatula. I also recommend slotted spatulas to allow liquids to slough off. I did damage my first non-stick pan with a metal spatula so I bought an all rubber one. This spatula I left on the side of a hot frying pan and the handle started to melt. Best spatula : slotted rubber head and grip but metal stem.

Next you’ll need kitchen tongs. Buy one you’re comfortable holding – I wasn’t happy with the kitchen tongs available because of the unwieldy grip so I ended up using metal ice bucket tongs in the kitchen. No problems and cheaper too.

Lastly,  a ladle for handling soups and stews. I initially bought a ladle that was so short it sunk inside the stew in my big pot. Get a ladle and put it in your big pot; the head should rest on the inside edge and the handle should project from the rim on the opposite side – that’s the right length.

And there you have it. A kitchen which will allow you to cook on your own. Cook means frying, boiling, braising, stewing, soup making, and salad making. Some of the major things you can’t do is baking and grilling, blending and microwaving but you can build up your kitchen going forward.
